About Le Saucier

For Nicola Smith, the concept for Le Saucier had been brewing for many years. In 2021 she decided to make it a reality.

With her extensive experience in the foodservice industry, restaurants and food manufacturing she began creating restaurant-style sauces, artisan fresh egg pasta, ravioli and pasta sauces. All with the intention of elevating dining experiences for the home gourmet.

Two years on, the passion for creating fine products has been rewarded. Six products (3 Jus and 3 Ravioli) were entered into the 2023 Sydney Royal Fine Food Show with all six winning medals – five Gold and one Silver. Two of the products received the top score in their relative Classes. Accordingly, for the first time in nine years, Nicola was awarded two Champion medals in two distinct classes.

Le Saucier’s fine food products are available from Farmers’ Markets, online here and from selected retailers. Le Saucier also supplies fine dining restaurants with fresh pasta, ravioli and sauces.

*Confit, pronounced “con-fee”, is a cooking technique traditionally used to preserve meats by cooking them in their own fat. The best-known example is duck confit. But the term “confit” can be used to describe any ingredient, including vegetables, that have been slow-cooked in fat at a low temperature. Our duck is cooked for 12 hours at 82 degrees C.

A flavour-full and classic, tomato and basil sauce which pairs beautifully with our Three Cheese Ravioli and bronze die pastas, for a delicious vegetarian meal.

Angus Beef Bolognese

Description
A delicious Bolognese Sauce made with Angus Beef Mince and pancetta, simmered in rich tomato and sofritto (onions, carrot, celery). Our Bolognese can be paired with any of our bronze die pastas – however, the Italians would never serve Bolognese Sauce with spaghetti! 🙂

Prawn Bisque

Description
A light prawn-flavoured cream sauce, with hints of brandy and tomato, which compliments our Prawn and Smoked Salmon Ravioli. The sauce can also be used with any of our bronze die cut pastas and your selection of seafood.

Mushroom Cream Sauce

Description
A rich blend of escallots, button mushrooms, parmesan and fresh cream. (Boscaiola for vegetarians). Pair with any of our bronze die-cut pastas or our Confit Duck Ravioli. It is also delicious on your favourite cut of beef or chicken.

Veal Osso Bucco Ragu

Description
A delicious ragu singing with the gentle flavour of Osso Bucco which has been braised for 12 hours in tomato, red wine and aromatic vegetables. Traditionally it is paired with wider pasta shapes… such as our Pappardelle or Tagliatelle.

Sage & Walnut Butter

Description
A moreish and classic flavour combination which pairs particularly well with our Roast Pumpkin and Rosemary Ravioli. It can also be cubed and melted over your favourite cut of chicken or pork.

… Restaurant-style Finished Sauces …

In August 2023 we entered each of our Jus sauces into the RAS Sydney Royal Fine Food Show. Each of the sauces were awarded Gold Medals (meaning a score above 90 points). Our Rosemary Jus also winning the Championship Medal (best in class) for Savoury Sauces and Preserves.

Orange Jus

Description
A full-bodied, orange-flavoured, restaurant-style sauce with a base of reduced veal stock. The stock is cooked for a minimum of 12 hours to achieve a deep, rich flavour. The veal stock is reduced to a thick, glossy sauce which is then enhanced with orange juice and liqueur. It pairs perfectly with our Confit Duck Ravioli along with dishes featuring chicken, pork, duck and game birds.

Veal Glace (reduced veal stock – veal bones, onion, carrot, celery), fresh orange juice, Triple Sec liqueur

Directions
Simply warm the Orange Jus and pour over cooked Confit Duck Ravioli or your preferred cut of pork, chicken, duck or game bird.

Red Wine Jus

Description
A rich, red wine-flavoured, restaurant-style sauce which pairs perfectly with our Beef Cheek Ravioli along with dishes featuring beef, venison, duck and BBQ red meats. It is created by layering flavours of red wine, chicken stock and thyme over a base of veal glace (reduced veal stock). It results in a rich, sticky sauce packed with flavour.

Description
A well balanced, restaurant-style sauce, with a base of reduced veal stock, which has been infused with rosemary. It pairs perfectly with roast meats and dishes featuring lamb, pork, chicken and goat.
